2019 Ripasso della Valpolicella Castel del Lago

The grapes for this wine come from all over Valpolicella. The grape composition is classic with Corvina 70%, Rondinella 20% and Corvinone 10%. The wine is produced using the traditional ripasso technique, where the wine is fermented together with the grape skins used to produce Amarone. This gives the wine more depth greater structure and complexity in the glass. Here are typical Ripasso notes of prunes, raisins and plums, with a softer structure than Amarone. The wine is dry, with a rich flavour of red fruits and elegant spicy notes.
