Drappier Champagne Clarevallis

An organic Champagne whose name, Clarevallis, is named after a monastery founded in 1115 by a monk named Saint Bernard. The grapes come from the slopes of Urville with vineyards that were planted by the Cistercian monks. The vineyards are cultivated 100% organically and they are ploughed again with horses, as in the past. Down in the deep cellars, built in 1152 by the monks of the Clarevallis monastery, the Champagne is vinified and aged. The Drappier family has today taken over and renovated these cellars. The label is designed by Charline Drappier and is inspired by the Clarevalli Bible, which dates back to the 12th century. A nice Champagne with a dense golden colour. The flavour offers intense notes of elderberries with hints of violets and plenty of minerality. The flavour is dry with low dosage and in full harmony and balance
